I bought a friand pan this week in Dunedin New Zealand… They are found in many cafe etc here.. I was eating them thinking they were made of almond flour only, so would be within the paleo diet!! Reply

Once you try a friand, you won’t be able to stop making them! Here are some other friand recipes you might like: Don’t worry if you don’t have a friand pan! This recipe will work wonderfully using a regular muffin tin instead, which also gives perfect results. Friand ingredients I have been completely intrigued by the idea of these adorable little cakes. I had never heard of them let alone tasted them before. And so I tried them. I’m not sure what the texture supposed to be like. They tasted wonderful but they’re little more dense than I expected. I’m not sure if it’s supposed to be dense or the supposed to be Aerie almost like angel food but a little more dense. Please advise I’d love to get them right. Reply I genuinely do not know as it’s not something I’ve tried. When subbing standard sugar for something less refined and (hopefully) healthier, I usually use something like honey or maple syrup or even coconut sugar (which I fine grind to make a like for like texture re icing sugar). A tiny bit of Xanthan Gum (although if you can’t tolerate it, the cakes should still hold reasonably well without it).Make a well in the centre of the dry ingredients and add the melted butter and whisked egg whites. Gently fold to combine completely.

Butter. Unsalted butter is the best choice here. You can sub for melted coconut oil if you need your friands to be dairy-free. Very true! I looked it up and it turns out to be an Australian and New Zealand thing with a French name. A friand in French is something in puff pastry, often a sausage, like a sausage roll. That’s why you were having trouble finding the tin in Europe! Melt the butter in a small saucepan until it turns a pale golden colour, but be careful not to let it burn. Fold the whisked egg whites into the dry ingredients, followed by melted butter and vanilla extract.
