Love it or hate it, Christmas is fast approaching. Since August I've been writing about Christmas chocolates, detailing what supermarkets and grocers are rolling out for the festive season. While van de Keuken is no longer running the show from the company headquarters in Pazzanistraat, Netherlands, the dedicated team currently behind Tony’s has continued to work at their goal of making all chocolate slave-free and Fairtrade.

What he found was that the cocoa farmers in West Africa, who van de Keuken says provide the major chocolate and candy companies with around 60% of the world’s cocoa, have been subjected to horrific conditions. He found farmers living in poverty, not getting a fair trade for their product, and found that unpaid child labour was being used. Sugar, Cocoa Butter, Cocoa Mass, Dried whole milk( Milk), 8.3% gingerbread (sugar, wheat flour, butter, whole egg, ginger, invert sugar syrup, ginger powder, cinnamon, clove, nutmeg, salt, rising agent (sodium carbonate)), ( Egg,Milk,Wheat), emulsifier: soya lecithin( Soya), This Tony’s Chocolonely Milk Chocolate Gingerbread Bar is a festive chocolate bar with a difference – find a Fairtrade chocolate Christmas tree hidden in the bar and break it out! With a small hole at the top of the chocolate tree you can even thread through some ribbon and make an extra special chocolate tree decoration - if you can wait that long to eat it! Enjoy this special Christmas treat with a clear conscience, this Fair Trade chocolate provides a living wage to cocoa farmers in its cooperatives and insures no illegal child slavery exists on its farms. 100% slave free.

Whether it’s a winter holiday, a declaration of love in February, or a spring celebration with lots of bunnies and eggs, there are instances when some of us like to feel all fancy and buy a big variety box of chocolates. Bite into this and you'll be greeted with a rich, creamy, caramel and butterscotch notes from the cocoa, complimented by a spiced biscuit crunch. The gingerbread biscuit pieces are firm and crunchy, as add a nice contrast to the sweet, smooth milk chocolate. As you crunch the gingerbread it releases warming flavours of nutmeg, cinnamon, and ginger, which work really well with this 32% milk chocolate. A closer look at the gingerbread biscuit pieces inside this milk chocolate bar While the mixer is running add the egg followed by the scraped out contents of the vanilla bean half.

Just like the candy cane bar, the snap is clean and crisp, but portioning this bar once again requires thumbs of steel. Proudly displaying my broken chocolate bar The company was founded in 2005 by 3 journalists from the Dutch TV show ‘Keuringsdienst van Waarde’ after they discovered that the world’s largest chocolate manufacturers were buying cocoa from plantations that used illegal child labor and modern slavery. It all began in the early 2000s, when investigative journalist Teun van de Keuken was looking into the process of chocolate production for the Dutch TV show Keuringsdienst van Waarde. They even have a special certification, Tony’s Open Chain, that other companies can participate in to show they’re following the 5-step philosophy and making a difference. Plenty of smaller companies are already onboard. For the chocolate rim: melt extra pieces of the Gingerbread Bar in the microwave in 20 second intervals, stirring in between. Dunk a glass or mug into the melted chocolate and twist to ensure even coverage. Add sprinkles (optional). Pour the mocha into the rimmed glass or mug. Chop the Tony's Chocolonely milk chocolate gingerbread bar into really small pieces. Place in a medium saucepan with the milk. Heat on medium/high until the chocolate has melted and dissolved. Add the brewed coffee. Right now there is modern slavery on cocoa farms in West Africa. Things aren’t being shared evenly in the chocolate supply chain. The chain starts with millions of farmers who produce cocoa and ends with the billions of consumers who enjoy chocolate. But what about the bit in the middle? This section is dominated by a handful of chocolate giants that profit from keeping the price of cocoa as low as possible. As a result, farmers are forced to live in poverty. And that leads to illegal child labour and modern slavery.

I bought two bars. The blue clad bar is the 51% Dark Chocolate Mint Candy Cane Chocolate Bar, while the orange one is the Gingerbread 32% Milk Chocolate Bar.

The company’s philosophy, which has guided their business since inception, is broken up into 5 major components: Start creating your mocha by brewing your espresso with the leon coffee. You can do this in a machine or cafetiere. Set aside. Ingredients: sugar, dried whole milk, cocoa butter, cocoa mass, 8.33% gingerbread (sugar, wheat flour, butter, whole egg, ginger, invert sugar syrup, ginger powder, cinnamon, clove, nutmeg, salt, rising agent (sodium carbonate)), emulsifier (soya lecithin)

If you’re looking for more of that lovely taste in a 6.35 oz portion size, look no further than the Dark Almond Sea Salt 51% bar. This is a geolocation cookie to understand where the users sharing the information are located. Tony’s Chocolonely isn’t the only ethical chocolate producer on the market. But unlike many other companies, who started out making chocolate for profit and attempted to make a positive impact on the world later, Tony’s approached the issue in reverse. Ingredients are bought at higher prices to ensure the farmers are properly compensated with a stable living income Here, Tony’s pairs their dark chocolate, with its rich but not-too-bitter 51% cocoa content, with simple almonds and sea salt flakes. It’s complex and sophisticated, but the smooth flavor and subtle bitterness also make it a great introduction to high-quality dark chocolate.
