Capers - these are sold brined in jars in supermarkets. They have a naturally salty flavour and add crunch and piquancy to dishes. They are delicious with smoked salmon or prawns too.

The tuna population is dropping every year, so it's up to us to opt for canned tuna that's been caught using sustainable fishing methods. The label " wild caught" means that the tuna was caught in the ocean and not farmed. " Dolphin safe/ friendly" means that tuna that swim with dolphins were not targeted, but this does not mean that this fishing method is safe for other sea creatures. Go shopping for canned tuna in the canned fish aisle, and you’ll find yourself in muddy waters: most grocery stores carry a dozen or so brands, each offering at least a few varieties. Fresh tuna contains about 32 calories per ounce with less than ¼ gram of fat and about 7 grams of protein. Tuna is rich in omega-3 fatty acids, though the fat content depends to some degree on the type of tuna. It also contains notable amounts of calcium, phosphorus, potassium, and B vitamins. People should limit their intake of canned tuna made from albacore to one 4-ounce (113-gram) serving per week. This is because it is higher in mercury ( 19). The best thing to do is look for wild-caught, pole-and-line caught fish with at least one of the two certification seals explained below. Pole and Line Caught TunaThe main source of protein in this recipe appears to be tuna. It is a fish-based wet food formula made with tuna and tilapia. Sunflower seed oil is the main source of added fat. The food contains 700 kcal/kg or about 60 kcal/can. Perhaps more important, however, is the potential risk of mercury poisoning when feeding your cat tuna and other fish. Traditionally, many pâtés were meat based and involve mincing various meats, then cooking them slowly in a dish in a bain marie. Completely delicious, but so time consuming. Since farm-raised fish live in a restricted area with a diet specially tailored so they gain weight, they tend to be fattier and have more protein. The meat is lighter colored, has less flavor, and tends to be fishier. They are also more likely to be contaminated with anti-algae chemicals. However, they will be cheaper because the farming process costs less than the process of catching fish in the wild. A pâté is often cooked in the same way but the meats are minced before cooking, so that the pâté can be spread on bread. Pâté can be coarse or smooth and creamy.
